Corn and Lentil Salsa

A fun and healthy tailgate snack that is high in fiber with an added protein punch.
Ingredients
- 2 ½ c. corn salsa: Equal parts corn, red peppers, and onion
- ¾ c. brown lentils
Instructions
- Rinse the lentils in a colander and pick out any shriveled lentils or non-lentils.
- Put lentils in a saucepan and just cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a simmer.
- Cover the pan and allow to simmer for about 15 min. or until lentils are tender, but not mushy.
- Drain lentils with a colander. Place lentils in a large bowl.
- Mix in the corn salsa and serve with tortilla chips.
